Food for thought
There's a mountain of fresh organic fruit and veggies in her American-style fridge, an industrial-sized juicer about the kitchen island, and endless bottles of healthy green items that she's just created from cucumbers, green peppers and spinach.
Add everything that May Frisby hasn't eaten steak for 20 years, which her favourite painting of those found on her walls is one of a Buddhist sitting on a chair, reading a newspaper, together with his to the world, and also you could be forgiven for convinced that she's a New Age, sandal-sporting, hippy-dippy type, craving peace and solitude.

It has required effort, but the rewards have been good -- they include a lovely home, an attractive and talented teenage son, Charles, as well as an enviable dating life. "All the men in my life," she jokes, before quickly adding: "There aren't any men in my life, only Charles."

May's father accustomed to laugh in the fact that she always played in the Italian blood, but it stood her in good stead. She found a premises in Chatham Street -- which at that time had five butchers and two fishmongers -- and she or he exposed. "I ripped the shop, place in tables and chairs and started serving lunch and dinner, seven days a week," she says.
Pasta Fresca, as the name of her restaurant suggests, uses only fresh pasta, which is made in May's factory in Donnybrook. Her factory also supplies other restaurants and delis. She did open another restaurant in Naas, but closed it down in 2008 -- something she doesn't regret.
May toyed with franchising the business, but her biological clock was ticking,[link widoczny dla zalogowanych], so, instead,[link widoczny dla zalogowanych], she opted to start a household together with her partner at that time, Peter Bark, with whom she spent eight years. She's a collection of tiny porcelain shoes, but it doesn't compare with her hoard of designer shoes -- a thing that enables this diminutive but feisty fighter just to walk tall. And May intends to be standing tall for an additional Two-and-a-half decades.
"We've amazing clients, coupled with an amazing Christmas. I'm attacking 2010 with renewed vigour. I'm taking out the bar and going to our roots. We're moving using the times," she says enthusiastically. "People are eating more in your own home, and one of the things we will do is good takeout. We're refreshing our menus and reducing our prices -- we're here Two-and-a-half decades, and we're going to be here for another 25. It is sometimes complicated, but you need to keep reinventing the wheel.
